Chocolate Chip Cookies

My uncle was one of my biggest fans when it came to me cooking for my family.  I remember his compliments like they happened yesterday.  I think the encouragement from him and the requests for seconds boosted my confidence.  Uncle Ray would stop by some Saturday mornings to visit or to work on a special house project request from my mom after my parent's divorced.  I learned from my mom that my Uncle Ray had plenty to eat from his home.  His wife, my aunt always cooked for him but he loved that we always had something special baking in the oven at our house.  I had not ever seen my mom use a cookbook so when I checked out cookbooks from the library at school or in the summer from the Public Library, I read wonderful new recipes all the time.  My favorite cookie recipe is chocolate chip and I have perfected it many, many times with all kinds of variations.  I have prayed about sharing my chocolate chip recipes and I know God wants me to share them with you but I warn you, they are all delicious!  Also be warned, I will continue to share many variations of my favorite cookie recipe in my blogs from time to time.

Ingredients: 2 1/4 cups sifted flour, 1 tsp. baking soda, 1 tsp. salt, 1 cup softened butter, 3/4 cup granulated sugar, 3/4 cup firmly packed dark brown sugar, 2 tsp. vanilla, 1/2 tsp. water, 2 eggs, 2 cups semi-sweet chocolate chips, 1 cup white chocolate chips.

Preheat oven at 375 degrees. Sift together flour, baking soda, and salt in a separate bowl. Combine butter, sugar, brown sugar, vanilla, and water; beat till creamy. Beat in eggs. Add flour mixture; mix well. Stir in chocolate chips. Drop by spoonful's on parchment papered cookie sheets.  Bake for 10-12 minutes.

Try to eat just one cookie, maybe two at the most.  For best low calorie results, wait to taste after all cookies have been baked and cooled.  Delayed gratification works... but really, who is counting?
