I love to reinvent recipes and flavors. It seems so odd that just a few years ago I can remember not wanting to eat brown rice. I assumed I would not like the flavor, perhaps due to eating it somewhere and it seemed un-flavorful. What was I thinking? I recall growing up we did not eat brown rice so I was not familiar with it. My mother always flavored her white rice. So why not flavor brown rice? Likewise, here is my latest, vegan style brown rice; it is fluffy, flavorful, and delicious. It is great alone, or with steam veggies. For meat eaters it goes well with teriyaki chicken or steam, baked or fried fish. I love to eat it at room temperature.
Here are the three ingredients that you will need to make this delicious rice:
2 cups short grain brown rice
4 cups vegetable broth
3 tablespoons olive oil
Wash rice in cool water in 4 quart pot; drain water. Add vegetable broth and oil. Let rice and wet ingredients come to a boil. Turn down rice to low heat and cook for 15-20 minutes uncovered; turn off heat remove from heat and cover pot for 20 to 30 minutes longer. Garnish with finely chopped cilantro. Hint: The refrigerated cooked rice can be eaten from the refrigerator after sitting at room temperature for 10-20 minutes.
