Yay! Birthday Cake

I have a beautiful, thoughtful, talented daughter. For my birthday this year, she made me a cake. The cake was delicious. A confetti cake made with applesauce. Applesauce is our secret ingredient for oil or butter and it is great for adding moistness to cakes and brownies.

Here is a simple recipe for Birthday Cake.

1 box confetti cake mix

3 eggs

1 1/2 cups applesauce

3/4 cup water

Mix together cake mix, eggs, applesauce, and water for 3 minutes on medium speed. Bake in 2 separate 8-inch round cake pans lined with parchment paper. Bake at 350 degrees for 18-22 minutes. Test doneness with a flat toothpick by inserting it into the center of the pan. If it comes out clean, it is done. Cool pans on baker rack for 5 minutes. Invert pans, one at a time to release cakes. Cool for 2 hours. Frost with homemade icing.

Homemade Icing

3 cups confection sugar, shifted

1 Tablespoon Vanilla extract

1 teaspoon Strawberry extract

4 ounces soft/room temperature butter

1-10 Tablespoons water

1- 2 Tablespoons Beet Root Powder (optional)

Strawberries, raspberries, shaved white chocolate, pecans (chopped). Flowers.

Mix confection sugar, vanilla extract, strawberry extract, and butter together on medium speed. Next, add water one tablespoon at a time, as needed. (Add Beet Root Powder now if used for color). When icing is blended, increase speed to high and whip frosting until smooth and creamy.

Spread icing on the first layer then add the second layer. Continue adding icing around the sides, and finish icing the top of the cake. Garnish with fruits, chocolate, and flowers.
